Is there anyway to control them after there first kill? They keep targeting my escort.

they'll track the nearest enemy unit, and if none are available, your friendlies. One trick some of us use is to cycle targets repeatedly and they'll flip flop between them, just keep doing it until they run out of juice and self destruct.
Really, the best bet is if there's only one or two enemies left, take them out guns only, then you avoid that risk.
