What does a "science ops" crew member do? And the navigator what does 'ee do?!

Here let me guess. Science: Helps with mining/construction.
Navigation: Makes you go further..

Just want to know before I spend money on them.

Oh another question can you hire other ships for extra cargo, or just for escort?

Science ops: will tell you the location of detected celestial objects in a sector ( good because some are hidden)
They will also give you a head to find a hidden crate if there is one in the sector

Navigation: they stop you from making really cool jumps ( but at the sazme point stop you from killing yourself with really silly jumps)

Fleet ships are just for escort.

My science officer never sticks around, it seems, no matter how much I pay him (well, up to around double his "fair wage" so far hasn't been enough).

Anyone got a rule of thumb about how to keep your good crew members around?

pay them much more!

any loyalty below 100 means there is a chance they will leave, simply put the more you pay , the higher their loyalty, I find a wage of at least 10 times their 'fair wage' usually does the trick ( I pay 20 times but you should see my crew! http://starwraith.com/forum/viewtopic.php?t=4264#p51710)

I've got to say, things are a little expensive in this game. Or rather military missions don't pay enough. All the money I spend in order to keep my ship in working order is way more than any contract.

Sure there is mining. Should I really be forced to mine, in order to have a military carrier?:(

By 'working order', I'm guessing you mean 'repairs', in which case, you may be allowing damage to be inflicted on your ship unnecessarily and/or you're ship isn't equipped correctly for front line combat duty. Military objectives don't pay well, that's true, the goal is very different when you're fighting in the war zones. However, you can minimize your losses and optimize the smaller amounts you're paid by proper defensive tactics to avoid damage and making sure to install the right equipment to restore your ship without cost to you. You will also need to minimize missile use, or at least install missiles with lower/no restoration costs. Focus on guns and save missiles for more critical situations that justify their use. Be sure to use the available zero gravity environment and controls to your advantage and not disadvantage to avoid taking damage.

You really aren't forced to do that and I would not recommend mining as a way to recover military operation costs. Careful ship design, weapon loadout/utilization, and equipment configuration go a long way in providing a more efficient combat platform and better financial results. Make sure not to fall into the mistake of trying to 'peg the needle' on getting items you think are the 'best' just because they have the higher numbers. Doing so can result in you winding up with a slower ship that is more expensive to repair and is more vulnerable. Test each frame and various equipment/weapon configurations for your play style, find the formula that provides the best results. If you still struggle to break even or make a little profit in war zones, I'd suggest taking a break from military combat and earn some money performing some civilian objectives which will also let you practice your combat skills while potentially earning a much higher return.
