Hello,
After some hours on the game (about 30 hours), i found that strange when i travel, that i saw only planets when you are…. near it (or not so far, and at this time
the planet is already big).
It seems that you can never see a planet approaching from small size (because you are far away) until you get closer, so planet is bigger. I play in VR (with very high settings), and i don't see something related to this in the settings...

The relatively low possible resolution of the VR HMD you are using may be resulting in not being able to see the distant objects rendered (which use a dedicated distance rendering system). Or at least make them harder to spot. Planets will disappear into smaller glowing points of light, but still larger than most of the surrounding stars in the background starfield. Likewise with nebula clouds and stars. They'll even be rendered out to several sectors away.
Probably the only option to counter such a limitation might be to increase the SS or other setting on the VR side of the equation that might help such objects be more visible on whatever device you are using. You can switch to a regular 1080 or higher monitor to see the difference and compare. Such a regular monitor will provide the resolution and image quality needed to see those details clearly.

Also, if you're using a Mantis jump drive or one of the better standard drives, you can easily outdistance visual view in one jump. Try backing away from a close planet one sector at a time ... then advance on the planet using standard engine thrust. That way, you can better watch as the size gets bigger, a little at a time.

Perhaps something to see with SS as they changed the way to modify it in a steam VR patch recently this year as i was not aware.
Something i don't know (but who says that we don't learn by gaming
), is the planet becomes more visible in a little time (i was on a speed about 6500
on 2 minutes it becomes from a very small sphere to something very visible)
