I've accepted a contract to find flying creatures on nearby planets several times. In my searches, both with the contract and without, I've not seen a single sign of any life on any planet, save for a few trees here and there. Is there something I should be looking for? Is there a particular habitat I should search?
All in all, planets seem to be a little plain and devoid of any life or activity. I understand that that's probably a limitation of a game like this being developed by a one-man team, but I'd love to see some diversity on planets.

The birds and butter flies will appear far away and will just be a very small dot that moves across the sky or near the ground. It may take a few minutes and seem like they will never show up. look left, right, and forward to spot them. If you approach them at to fast a speed you will kill them
as I have.
I head to the way point then search the skies all around.

If you've ever played IL2 Sturmovick '46, then you are already well-trained to spot flying creatures.
Spot the dots is the name of both games except in '46 you're looking for enemy planes instead.

Help with finding flying creatures on a planet
It almost seems the game had a limited number of flying creatures and most of them were sucked up during beta testing (I'm guessing). With every iteration, they become fewer and fewer. In my latest attempt to collect the required five, I ran out of fuel after snagging only one bird.

Okay, I forget who but I watched somebody's YouTube shorts yesterday ... tracking butterflies and birds. I noticed that, even while he tracked a butterfly, two birds appeared in the distance. And, while tracking a bird, others could be seen hovering over the mountains. So, evidently, there is at least one planet where SeeJay hasn't managed to collect all the wildlife ... I'd ask for directions but, if the planet was named in the open forum, it would probably lead to near extinction on the planet in question.

I have only seen two birds at one time but then the pay for getting them seems worth the effort.

I think it must depend on the planet. There are times when I've rammed and killed them by the flock and other times (on different planets) when they were extremely rare.

Yeah, I ran out of fuel after only snagging two birds and I think ramming a third. But spent a good 10 minutes between each and then had to give up on it with the potential of running completely out of fuel.
