I wat watching youtube and noticed someone had their controls set so that mouse can, instead of aim the pitch of the ship, determine looking around in the cockpit. I want this soooo badly! please help!

That is not what you are seeing.
The game supports a head tracking system ( TrackIR ) and you see that being used.

You can also use the mouse to look around by activating the 'Mouse Look' mode, default F10 key.
