...flying around in space with a joystick, keyboard and mouse! For a silly old git like me that's a lot to think about, let alone actually control anything. So here I am trying to complete the second IMG quest - the one with the snakey like tube with a teeny weeny diameter and I'm lucky to get through 3 rings. I think I did 10 once but that was because I did the Form on Target thing for a few kilometres before the opposition disappeared over the horizon. Another post here says. "Go around 1000 - 'wha?' With my control abilities that puts me somewhere in the next sector before I've figured out how to turn around, go upside down sideways and going backwards...
Well, I must be getting close to 20 times on this quest and thinking, is this it? You can't get on any further if you don't do this? That's a pity.
I quite understand how most peeps will just say, "Pah, too easy. What's the problem?" My son & his son - yeah I'm that old! - had a good laugh when I told them last night... but it's a shame to confine the game to the recycle bin under the heading "Nice but..." after a week.
Tell me, do you have to do this quest? Can't you contract it out? Can't you say you get sea-sick easily and have a sick note to that effect saying you're not supposed roll about in little pipes as you're liable to splatter you're breakfast all over the cockpit, which some poor cleaner has to clean up. Especially those little bits that get stuck in between the keys.

Something that really helps in this mission is to use the IDS multiplier, which if I remember correctly is bound to 7 and 9 on the Numpad by default. Increasing this allows the IDS to go to higher speeds so you don't have to switch to Inertial.
The IMG quest isn't really "required" for anything so if that doesn't work you do not absolutely have to go through with it.
The IMG quest mostly takes you through some of the stuff you can do in the game so you have a better idea of how things work before you go out and do what you want, so it isn't really a barrier preventing you from doing something.

Don't worry too much Jack, this quest took me right around the same number of tries that you mentioned in order to complete. I would make a few futile attempts, then move on to something else, and come back to it later. Finally on attempt 30 something, I managed to get a "feel" for moving in space and completed this portion of the quest. The way I did it was by using short 1 second afterburner thrusts and keeping my fingers as FAR away from the space bar as possible so as to not accidentally engage inertia mode. Do not be discouraged about the race. Enjoy the rest of the Simulator and come back to it later

I had serious issues with racing too, before the kind guys here guided me a bit. I had been playing for roughly a week and I had no idea that IDS multipliers existed (rough real world equivalence being transmission/gears). I tried everything I knew at the races, inertial, afterburner, shooting the opponent and as it turns out, its frowned upon... doesn't show sportsmanship or something... 
I had literally flown a week with max speed of ~550 or so, untill a completely new horizon opened up for me, suddenly speeds over 1000 were at my disposal!
So yea, put IDS multiplier 2 or 3, increase speed to around ~900-1000 (I usually go 1000-1200, because I like to live dangerously in Evochron) and completely ignore the opponent in the tube, just concentrate steering your ship. Also: no inertial flying in side the tube unless you really like pain (or want to live even more dangerously than I do).
If you still have issues, upgrade to better wings, they improve turn rate & overall handling.
Also: the IDS multiplier up/down commands are not bound to anything by default, which is a bit silly if you ask me. So check your keybindings, page 3, and assign them to your liking

Oh I wasn't complaining. That happens when you're sitting on the bus going home after the daily grind and the mechanical voice kicks in with "The final destination of this bus has changed. Please listen to further announcements" The bus driver them mumbles something incomprehensible and locks his door to avoid the various missiles being thrown at him...
... But the advise given here has been useful and, indeed, was where I arrived in the end anyway i.e. go and do something else until you've got the hang of the game & mechanics.
I was really concerned that if there was a sort of 'Campaign' or storyline option of sorts to follow then it seemed to me a bit frustrating to fall at the second step!
Anyway I'll get back there sometime.

But, yeah, I think Vice made that change a few versions ago.

I suspect that it could have scrambled peoples' key customisations if Vice had added two extra ones effectively at random
The real problem is that the fact that an "IDS multiplier" even exists isn't well publicised for new players. Once you know it exists it's dead easy to assign the keys.
