Is this the latest version. 1.588 is still showing on the main web site, but will not allow me to play the game.

Click refresh on your browser, you probably have the old site 'cached'.

For the update ...Do I redownload the game or is there a specific file for updating? Dont want to overwrite my pilot or anything like that

You download the whole game and install.

It won't touch any profiles or maplogs.

As SeeJay says no worries about your pilots but it is always a good isea to have them backed up once and awhile on a flash drive or such in case of hard drive failure. Been there did that.
