Would it be possible for cargo transport missions from one station to another be added, like missions to transport commodities from one station to another in-system or in another system?

Probably not at this stage within the localized contract framework, but you can certainly arrange that now on your own terms using the economy/market details quadrant map mode to analyze buy low/sell high opportunities and then fly transport trade runs through those systems.
