Hi - just about to start playing the game.
I would welcome advice about whether it is critical - picking Mining or Mercenary Characters at the start.
Is there a lot of flexibility so that if you start as a Miner - then later you can do Mercenary missions? or is it easier to start as a Mercenary and then add a bit of mining later.

Yes there is a lot of flexibility. Your starting profile really depends on what you would prefer to do... if you like the idea of mining (early in the game it's a great way to make money) then go with that profile and you'll start off with more suitable equipment, like tractor beams and cargo holds. Starting out as a mercenary I think you'll have to go buy a tractor beam if you want to do some mining, but I think you'll have a faster, more agile ship. Eventually, when you have enough money it doesn't matter what your starting profile was because you can just upgrade your equipment how you like.

The initial "class" choice does help to outfit you with the tools you need for your preferred line of work, but it's pretty easy to change the way you play, and once you start bringing in the cash, the flexibility of ship building really becomes evident. I started as a mercenary, but before a few days of playing, I had already customized a hybrid miner-mercenary ship which works really well for my sneaky mining and in-and-out contracting style.
So don't worry too much about early decisions, just get a taste for the things you can do in this game and decide how you want to proceed later!
